Buffets are convenient, but safe choices matter when temperatures, service volume and food turnover vary.
Choose freshly replenished items
Select food that is steaming hot, visibly chilled or prepared in front of you. Avoid dishes that look dried out, warm when they should be cold or repeatedly handled.
Use serving utensils correctly
- Use the utensil assigned to each tray
- Do not touch food with your hands
- Take a clean plate for every return
- Keep raw and cooked foods separate
- Supervise children at the buffet
Be cautious with high-risk foods
Use extra care with seafood, mayonnaise-based salads, dairy desserts, cut fruit and foods containing eggs when temperature control is uncertain.
Do not store buffet food in the room
Food can become unsafe quickly in a warm room or a mini-fridge that does not maintain a reliably cold temperature.
