Yuca Frita (fried cassava)

    1 to 2 kg of cassava
    230 g of oil
    Salt to taste

It's a very simple dish that is often made with pieces of yuca con mojo prepared the day before and which we did not eat and which we had stored in the fridge with the intention of enjoying it differently the next day. .
Peel, cut and boil the cassava; once soft, drain it and remove the central strand.
Heat the fat and fry the cooked cassava pieces until they turn golden brown.
Serve as a starter, with any sauce, or to accompany the main course.
Don't throw anything away my friends.
