Pineapple fish fillets

    ▪︎Fish fillets
    ▪︎100 g butter (or oil)
    ▪︎150 ml extra oil for frying
    ▪︎A pinch of salt
    ▪︎1 pinch of ground pepper
    ▪︎150 ml of white wine or cooking wine
    ▪︎Lemon or bitter orange juice
    ▪︎50 g of wheat flour
    ▪︎150 g of sugar
    ▪︎300 g pineapple
    ▪︎Ginger
    ▪︎Rosemary
    ▪︎Parsley

Pineapple is undoubtedly one of the most typical elements of Caribbean and therefore Cuban cuisine.

Pineapple is known as the queen of fruits, not only because of its crown, but also because of its particularly fresh and intense flavor and the endless possibilities of combining it with our meals. Today we present a fish fillet in a glazed pineapple sauce.

Season the fish fillets with lemon, salt and pepper. Dredge them in wheat flour and fry them in a pan with hot oil. Cook on both sides until golden brown.

In addition, you must melt the sugar in the butter or oil, add the white wine, the pineapple cut into small pieces or slices and glaze with a little grated ginger.

Add the rosemary just at the end of the glaze.
Serve the fish fillets on the pineapple and the chilled sauce on top, sprinkle everything with finely chopped parsley.
