Spices appreciated by Cubans
The essentials for Cuban cuisine:
Cumin, oregano, pepper and bay leaf.
Such as garlic, chili peppers and onions, limes and bitter oranges, these are the basic elements.
Also :
Cloves, cinnamon, turmeric, ginger, basil, parsley and coriander
Paprika, rosemary, thyme, dill and anise
The last two groups are perhaps used less because they are also less available. Aromatic herbs are seasonal. I try to look everywhere in the city's agro-markets and depending on the season I'm lucky to find quite a few.
Olives, capers, mushrooms and raisins are very popular for some Cuban recipes but very difficult to find.
Celery and chives are other popular herbs.
