FOOD SAFETY
Gluten-free in Varadero: plan for more than the menu
The main challenge is not simply avoiding bread or pasta. Shared utensils, sauces, fryers and changing supplies can create serious cross-contamination risks.
Where cross-contamination happens
| Situation | Risk | Safer question |
|---|---|---|
| Buffet | Mixed utensils, crumbs and sauces. | Can a chef prepare a separate simple plate? |
| Fryer | Breaded and non-breaded food in the same oil. | Is the oil used only for gluten-free food? |
| Sauces | Flour, bouillon or unknown thickeners. | Can the food be served without sauce? |
| Grill | Contact with bread, marinades or shared tools. | Can a clean surface and utensils be used? |
